White criollo cacao from Chiapas

This special cacao grows in the ancient cacao region of Chiapas. It might be closest to the high quality cacao cultivated by the Maya centuries ago. Genetically it is a rare criollo variety of white seeds. José Maria continues to cultivate this cacao that was carefully selected by his great grandparents. It is a very delicate cacao to grow and genetically unique. Because the farm is so small and this cacao rarely exists anymore we are really happy to share this small batch.

The cacao is much lighter in taste than you might be used to. It is very low in bitterness and has a rich and soft taste. Just making this cacao pure on a water base is delicious and soft. Also it has a nice clear and potent effect that I really like.

We have two versions. Both are white criollo cacao, but grown in different places in the same region. In the dropdown you can choose between the Cacahoatán or Xoconochco. They are very similar, but have a slightly different taste. Just as every year harvest will have slight differences. Both are very small and limited batches, which is why we have to wait for the cacao to grow again when its sold out.

Cacahoatán origin: Cacahoatán, Chiapas, Mexico

Xoconochco origin: Soconusco, Chiapas, Mexico
Xoconochco taste notes: very soft, earthy, low bitterness, some acidity, with hints of tobacco, caramel and nuts.

Chiapas was an important centre of Maya civilization in pre-colonial Mesoamerica. Cacao thrived in this region and the Maya were well known for the special cacao they cultivated here. Visiting José María and finca La Rioja was a real joy. It takes a lot of attention to grow this special cacao and amongst it are the lagarto, pentágona and other criollo varieties.

Shaped in 100% pure cacao coins of 4gr each (instead of flakes, but same ease of use). Because of the small batch only in 450gr size.

Favourite white criollo cacao recipe

  • 100% pure drink on water base, you can choose some spices but the softness of the cacao can easily be overpowered. 20gr of this cacao with 100ml hot water (80°C), mixed into a frothy drink.

  • The 4gr cacao coins are easy to dose. They dissolve easily or you can break them in smaller pieces if you prefer. For example 5 coins is 20gr.
