Create a layer of foam

Traditionally cacao drinks where prepared with a layer of foam. This gives a very pleasant mouth feel and looks beautiful. Mayas and Aztecs used to pour cacao drinks from vase to vase until foam appeared. Later they used a molinillo (whisker) to beat the air bubbles in which creates a softer and aromatic drink.

Tip 1: Use a mixing jug if your cup is not large enough.

Tip 2: You can also use a (hand)blender, especially for larger batches of cacao drinks.
